Hi! I'm Aliera from Girls Who Code. I made this recipe because my grandma makes killer Coconut cream pie. So this is the recipe I made. Hope you like it!=)
3/4 cups - sugar
1/4 cups - cornstarch or flour
3 cups - milk
4 eggs
1 tablespoons - margarine or butter
1 1/2 teaspoons - vanilla
1 1/3 cups flaked coconut
1 baked pastry shell
1 cup whipping cream
1/4 cup powdered sugar
1. For filling, in a saucepan combine sugar and cornstarch or flour. Gradually stir in milk.
2. Cook and stir over medium-high heat until mixture is thickened and bubbly. Reduce heat; cook and stir for 2 more minutes. Remove from heat.
3. Separate egg yolks from whites in a separate bowl.
4. Beat egg yolks lightly with a fork. Gradually stir about 1 cup of the hot filling into yolks.
5. Add yolk mixture to saucepan; bring to a gentle boil. Cook and stir for 2 more minutes.
6. Remove from heat. Stir in margarine or butter, vanilla, and 1 cup flaked coconut. Pour the hot filling into Baked Pastry Shell. Cover and chill for 2 to 4 hours or until filling is set.
7. In a chilled medium mixing bowl, beat whipping cream and powdered sugar with an electric mixer until stiff peaks form (tips stand straight). Spread whipped cream over pie.
8. Cover and chill for 30 minutes before serving. If desired, garnish with 1/3 cup Flaked Coconut.
